- 1 pound ground beef (85/15)
- 2 tablespoons canola oil
- 2 tablespoons butter
- 1 medium onion (finely diced)
- 4 cloves garlic (minced)
- 1 cup shredded carrots
- 1 cup diced celery
- 1 teaspoon dried parsley flakes
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 pounds potatoes (peeled and cubed)
- 3 cups chicken broth
- 1/2 cup sour cream (optional)
- 1/4 cup all-purpose flour
- 4 tablespoons butter (for the cheese sauce)
- 2 cups cream (or whole milk)
- 1 pound Velveeta processed cheese (or cheddar cheese and cream cheese)
- 2 cups cheddar cheese (shredded)
Instructions
- Heat the large saucepan or Dutch oven over medium heat. Add the canola oil, and once hot, introduce the ground beef. Crumble the beef as it cooks, stirring until no longer pink. Transfer the cooked beef to a plate, draining excess grease from the saucepan.
- Melt the two tablespoons of butter over medium heat in the same saucepan. Add the finely diced onion and stir for about a minute until soft.
- Add the minced garlic, carrots, and diced celery, followed by parsley, basil, thyme, paprika, salt, and black pepper. Stir and sauté for 8-10 minutes.
- Combine in the cubed potatoes, the cooked beef, and pour in the chicken broth. Bring everything to a boil.
- Reduce the heat, cover, and let it simmer for 10-12 minutes until the potatoes are fork-tender.
- In a separate saucepan, melt four tablespoons of butter over medium heat. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the cream, then add in the Velveeta and cheddar cheese, stirring until melted.
- Pour the cheese sauce into the large saucepan and stir to combine, creating a creamy texture.
Notes
For a lighter option, substitute ground beef with turkey or plant-based alternatives. Customize with additional veggies or spices to suit your taste.
