- 2 green onions, chopped

Instructions
- Heat the oil in a large skillet or wok over medium-high heat until it shimmers.
- Sauté the mixed vegetables for 2-3 minutes until tender.
- Push the vegetables aside and pour in the beaten eggs; scramble until fluffy.
- Combine the cooked rice and diced chicken, mixing well.
- Add soy sauce and season with salt and pepper, stir-frying for another 2-3 minutes.
