Description

A delightful dish combining tender chicken, vibrant vegetables, and perfectly cooked rice, stir-fried for a comforting and flavorful meal.


Ingredients

  • 2 cups cooked rice (cold, day-old rice works best)
  • 1 cup cooked chicken, diced (rotisserie chicken is ideal)
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet or wok over medium-high heat until it shimmers.
  2. Sauté the mixed vegetables for 2-3 minutes until tender.
  3. Push the vegetables aside and pour in the beaten eggs; scramble until fluffy.
  4. Combine the cooked rice and diced chicken, mixing well.
  5. Add soy sauce and season with salt and pepper, stir-frying for another 2-3 minutes.
  6. Garnish with chopped green onions before serving.

Notes

For best results, always use cold, day-old rice and avoid overcrowding the skillet while cooking.
