- 1 lb chicken breasts (or thighs), sliced against the grain into 1/4” thick pieces
- 1 tablespoon light soy sauce
- 1 tablespoon Shaoxing wine
- 1 tablespoon cornstarch
- 1/2 cup chicken broth
- 2 tablespoons light soy sauce
- 2 tablespoons Shaoxing wine
- 2 teaspoons dark soy sauce
- 1 tablespoon cornstarch
- 1 1/2 tablespoons sugar
- 2 teaspoons coarsely ground black pepper
- 1/8 teaspoon salt
- 2 tablespoons peanut oil
- 1 tablespoon minced ginger
- 2 cloves garlic, minced
- 1/2 white onion, chopped
- 2 bell peppers, chopped (mixed colors)
Instructions
- Marinate the chicken: In a medium-sized bowl, combine the sliced chicken, light soy sauce, Shaoxing wine, and cornstarch. Mix gently by hand until every piece is lightly coated. Let it rest for 10 to 15 minutes.
- Prepare the sauce: In a small bowl, whisk together all sauce ingredients: chicken broth, light soy sauce, Shaoxing wine, dark soy sauce, cornstarch, sugar, black pepper, and salt.
- Sear the chicken: Heat 1 tablespoon of peanut oil in a large skillet over medium-high heat until shimmering. Add the marinated chicken in a single layer. Sear for about 1 minute until lightly browned. Flip and cook for another 30 seconds to 1 minute.
- Sauté the aromatics: Remove chicken and add remaining oil, then add minced ginger and garlic. Stir quickly, followed by onion and bell peppers; cook for about 20 seconds.
- Combine everything: Stir the sauce mixture quickly, then pour it over the vegetables in the skillet and cook until thickened.
- Bring it all together: Add chicken back to the skillet and stir well to coat in the sauce. Transfer to a serving plate.
- Serve warm: Enjoy your Black Pepper Chicken hot.
Notes
Make-ahead: Marinate chicken in advance; it can be refrigerated for up to 24 hours. For a healthier twist, use an air fryer at 375°F (190°C) for crispy results.
