Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the fettuccine: Fill a large pot with water, add salt, and bring to a boil. Add fettuccine and cook according to package instructions, about 8-10 minutes. Drain and set aside.
  2. Sauté the smoked sausage: In a large skillet over medium heat, add olive oil and sliced sausage. Cook until browned, about 5-7 minutes.
  3. Infuse with garlic: Stir in minced garlic and sauté for 1 minute.
  4. Pour in the cream: Lower heat, pour heavy cream into the skillet, and mix to combine. Add Cajun seasoning.
  5. Melt the cheese: Gradually stir in grated Parmesan cheese until melted. Add reserved pasta water if needed for creaminess.
  6. Combine pasta and sauce: Toss the cooked fettuccine in the sauce until well coated.
  7. Season: Taste and add salt and pepper as desired.
  8. Serve: Transfer to plates and garnish with chopped parsley.
