Description

A vibrant and delicious sushi bowl combining sushi rice, crab, avocado, and cucumber, perfect for a casual yet impressive meal.


Ingredients

  • 1 cup short-grain sushi rice
  • 1.5 cups water
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 oz imitation crab meat (or real crab)
  • 1 medium cucumber, sliced
  • 1 ripe avocado, diced
  • 2 tbsp low-sodium soy sauce
  • Sriracha (optional)

Instructions

  1. Rinse your sushi rice under cold water in a fine mesh strainer until the water runs clear.
  2. Cook the rice according to package instructions, using 1.5 cups of water.
  3. Transfer the warm rice to a mixing bowl and fold in rice vinegar, sugar, and salt.
  4. Slice your cucumber into thin rounds and dice your avocado.
  5. Layer a generous amount of sushi rice as your base in serving bowls.
  6. Top your rice with sliced cucumber, diced avocado, and shredded crab.
  7. Drizzle low-sodium soy sauce and add Sriracha if desired.
  8. Serve immediately and enjoy!

Notes

Make sure to rinse the rice properly to avoid a gummy consistency. For best results, use a rice cooker.
