- 4 Sweet Potatoes, peeled and sliced into 1/2 inch rounds
- 1/2 cup Butter
- 1 cup Brown Sugar
- 1 tsp Cinnamon
- 1 tsp Vanilla Extract
- 1 cup Mini Marshmallows (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and slice the sweet potatoes into rounds about half an inch thick.
- Melt the butter in a large pot over medium heat, then stir in brown sugar, cinnamon, and vanilla until smooth.
- Add the sweet potato slices and mix until well coated with the syrup.
- Transfer the sweet potatoes to a baking dish and pour any remaining syrup over them.
- Bake for 30-40 minutes, stirring occasionally, until fork-tender.
- Optionally, add mini marshmallows for the last 10 minutes of baking.
- Serve warm as a delightful side dish.
Notes
Make ahead by slicing sweet potatoes 24 hours in advance and storing them submerged in cold water. Enjoy with complementary dishes like roast turkey or ham.
