- 2 tbsp butter
- 1 onion, thinly sliced
- 4 slices bacon, diced
- 1 cup arborio rice
- 4 cups chicken or vegetable broth
- 1 cup grated Parmesan cheese
- 2 tbsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Melt butter in a large skillet over medium heat.
- Add the sliced onions and cook for 15-20 minutes until deeply caramelized.
- Toss in the diced bacon and cook for 5-7 minutes until crispy, then set aside.
- Pour in the arborio rice, stirring constantly for 2-3 minutes.
- Slowly add the broth, half a cup at a time, stirring constantly for about 18-22 minutes.
- Stir in the grated Parmesan and thyme, and season with salt and pepper.
- Serve immediately, garnishing with the reserved crispy bacon bits.
Notes
For extra creaminess, add a splash of cream at the end. Use homemade broth for the best flavor.
