Description

A creamy risotto featuring sweet caramelized onions, crispy bacon, and rich Parmesan cheese, perfect for a comforting meal.


Ingredients

  • 2 tbsp butter
  • 1 onion, thinly sliced
  • 4 slices bacon, diced
  • 1 cup arborio rice
  • 4 cups chicken or vegetable broth
  • 1 cup grated Parmesan cheese
  • 2 tbsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add the sliced onions and cook for 15-20 minutes until deeply caramelized.
  3. Toss in the diced bacon and cook for 5-7 minutes until crispy, then set aside.
  4. Pour in the arborio rice, stirring constantly for 2-3 minutes.
  5. Slowly add the broth, half a cup at a time, stirring constantly for about 18-22 minutes.
  6. Stir in the grated Parmesan and thyme, and season with salt and pepper.
  7. Serve immediately, garnishing with the reserved crispy bacon bits.

Notes

For extra creaminess, add a splash of cream at the end. Use homemade broth for the best flavor.
