Description

Delicious and comforting carrot cake cookies infused with warm spices and butterscotch chips, perfect for any occasion.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup rolled oats
  • 1/2 cup butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a medium bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar in a separate bowl until smooth.
  4. Beat in the egg and vanilla extract until well combined.
  5. Stir in the dry ingredients until just combined.
  6. Fold in the grated carrots, oats, and butterscotch chips.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them out.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Make ahead of time by preparing the dough a day in advance. These cookies can be stored in an airtight container for about a week.
