- 1/2 cup rolled oats
- 1/2 cup butterscotch chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a medium bowl.
- Cream together the softened butter, brown sugar, and granulated sugar in a separate bowl until smooth.
- Beat in the egg and vanilla extract until well combined.
- Stir in the dry ingredients until just combined.
- Fold in the grated carrots, oats, and butterscotch chips.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them out.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
