- 2 cups grated carrots

- Streusel topping: 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup butter, 1/2 tsp cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease your cake pan.
- Whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
- Mix the eggs and oil in another bowl, then add the grated carrots and vanilla extract.
- Combine the wet and dry ingredients, mixing just until incorporated. If using nuts, fold them in gently.
- Pour the batter into the prepared cake pan and spread it evenly. Sprinkle the streusel topping generously over the surface.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool slightly before serving.
