Description

A delightful carrot coffee cake that combines the earthy sweetness of grated carrots with warm spices and a crunchy streusel topping.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional)
  • Streusel topping: 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup butter, 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pan.
  2. Whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
  3. Mix the eggs and oil in another bowl, then add the grated carrots and vanilla extract.
  4. Combine the wet and dry ingredients, mixing just until incorporated. If using nuts, fold them in gently.
  5. Pour the batter into the prepared cake pan and spread it evenly. Sprinkle the streusel topping generously over the surface.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool slightly before serving.
