Description

Cattle Drive Casserole is a hearty and flavorful dish that combines ground beef, beans, and a variety of spices, topped with a cheesy layer for a delightful meal.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn kernels
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  4. Stir in the black beans, kidney beans, diced tomatoes, corn, chili powder, cumin, salt, and pepper. Mix well.
  5. Transfer the mixture to a baking dish and spread evenly.
  6. Top with shredded cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  8. Let it cool for a few minutes before serving.
