- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup cherries, pitted and chopped
- 8 ounces cream cheese, softened
- 4 cups powdered sugar
- 1/4 cup cherry juice or cherry syrup
- Fresh cherries for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans, ensuring your cake layers will slide out smoothly.
- Creaming together the softened butter and granulated sugar until light and fluffy, about 4-5 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Mix the flour, baking powder, and salt in a separate bowl.
- Combine the dry mixture with the creamed mixture, alternating with milk. Start and end with dry ingredients. Then fold in vanilla and chopped cherries.
- Distribute the batter evenly among the prepared pans, filling each about 2/3 full.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
- For the cream cheese frosting, beat the softened cream cheese until smooth. Gradually add powdered sugar, followed by cherry juice, and mix until creamy.
- Once the cakes are cool, layer them with frosting in between and garnish with fresh cherries.
Notes
Make-ahead tips: Bake layers a day in advance and refrigerate tightly wrapped. Frost a few hours before serving.
