Description

A delightful Cherry Layer Cake featuring fluffy layers of cake with tangy cream cheese frosting and fresh cherries, perfect for celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup cherries, pitted and chopped
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1/4 cup cherry juice or cherry syrup
  • Fresh cherries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans, ensuring your cake layers will slide out smoothly.
  2. Creaming together the softened butter and granulated sugar until light and fluffy, about 4-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix the flour, baking powder, and salt in a separate bowl.
  5. Combine the dry mixture with the creamed mixture, alternating with milk. Start and end with dry ingredients. Then fold in vanilla and chopped cherries.
  6. Distribute the batter evenly among the prepared pans, filling each about 2/3 full.
  7. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  8. Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
  9. For the cream cheese frosting, beat the softened cream cheese until smooth. Gradually add powdered sugar, followed by cherry juice, and mix until creamy.
  10. Once the cakes are cool, layer them with frosting in between and garnish with fresh cherries.

Notes

Make-ahead tips: Bake layers a day in advance and refrigerate tightly wrapped. Frost a few hours before serving.
