Description

A delightful sandwich featuring grilled chicken, creamy avocado, and melted cheese, all hugged by crispy bread.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 ripe avocado
  • 1 cup cheddar or mozzarella cheese
  • 4 slices of sourdough or white bread
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Grill the chicken: Heat your grill or grill pan over medium-high heat. Season the chicken breasts with salt and pepper, then cook until golden brown and no longer pink inside, about 6-7 minutes per side. Allow to rest before slicing.
  2. Mash the avocado: In a mixing bowl, scoop out the avocado. Use a fork to mash it, then season with salt and pepper.
  3. Butter the bread: Spread butter generously on one side of each slice of bread.
  4. Assemble your sandwich: On the unbuttered side of a slice of bread, layer chicken, mashed avocado, and cheese. Top with another slice of bread, buttered side up.
  5. Grill the sandwich: Heat your skillet over medium heat and grill the sandwich for 3-4 minutes on each side until golden brown and the cheese melts.
