Description

A delicious and comforting Chicken Carbonara featuring tender chicken, crispy bacon, and a creamy Parmesan sauce, perfect for weeknight dinners or special occasions.


Ingredients

  • 8 ounces spaghetti
  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 4 slices bacon, chopped
  • 2 cloves garlic, minced
  • 3 large eggs
  • 1 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving a cup of the pasta water.
  2. Sear the chicken: Heat olive oil in a large skillet over medium heat. Add diced chicken and season with salt and pepper. Cook until the chicken is nicely browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Crisp the bacon: In the same skillet, add the chopped bacon. Cook until it’s crispy and golden brown, about 4-5 minutes.
  4. Infuse the garlic: Stir in the minced garlic and cook for another minute.
  5. Prepare the sauce: In a mixing bowl, whisk together the eggs and grated Parmesan cheese until blended.
  6. Combine everything: Remove the skillet from heat. Quickly toss in the drained spaghetti and cooked chicken. Pour the egg and cheese mixture over the hot pasta, tossing vigorously. Add a splash of reserved pasta water if needed.
  7. Season: Taste your Carbonara and add more salt and pepper if necessary.
  8. Serve hot: Serve immediately, garnished with freshly chopped parsley.

Notes

For best results, avoid overcooking the eggs, and don’t forget to reserve pasta water for sauce consistency.
