- 2 boneless, skinless chicken breasts, sliced
- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Optional: cooked rice or noodles for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced chicken breasts and cook until browned and fully cooked through, about 5-7 minutes.
- Add the minced garlic and sliced bell pepper to the skillet, sauté for an additional 2-3 minutes.
- Stir in the sliced zucchinis and soy sauce, cooking for another 3-5 minutes.
- Season with salt and pepper to taste.
- Serve immediately over cooked rice or noodles, if desired.
Notes
For a gluten-free option, use tamari or coconut aminos instead of soy sauce. If you’re short on time, prepare the chicken and veggies a day ahead and refrigerate.
