Description

A quick and delicious stir fry featuring tender chicken and vibrant zucchini, all coated in a savory soy sauce.


Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Optional: cooked rice or noodles for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken breasts and cook until browned and fully cooked through, about 5-7 minutes.
  3. Add the minced garlic and sliced bell pepper to the skillet, sauté for an additional 2-3 minutes.
  4. Stir in the sliced zucchinis and soy sauce, cooking for another 3-5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve immediately over cooked rice or noodles, if desired.

Notes

For a gluten-free option, use tamari or coconut aminos instead of soy sauce. If you’re short on time, prepare the chicken and veggies a day ahead and refrigerate.
