Description

Ingredients

  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 package eggroll wrappers
  • Oil for frying

Instructions

  1. Gather and mix ingredients in a mixing bowl.
  2. Wrap the filling in eggroll wrappers.
  3. Heat the oil to 350°F (175°C).
  4. Fry in batches until golden brown, about 3-4 minutes per side.
