Description

These moist chocolate and banana muffins combine ripe bananas and rich dark chocolate for a delectable treat that’s both indulgent and healthier.


Ingredients

  • 4 ripe bananas
  • 1 egg
  • 150 g all-purpose flour
  • 100 g dark chocolate chips
  • 100 g sugar
  • 60 ml coconut oil
  • 1/3 tsp vanilla extract
  • 1 tsp baking powder
  • 1 pinch of salt
  • Dehydrated banana (optional)

Instructions

  1. Prepare the bananas: In a flat bowl, peel your overripe bananas and mash them until smooth.
  2. Combine the wet ingredients: In a large bowl, add the mashed bananas to the egg, coconut oil, and vanilla extract. Whisk until creamy.
  3. Mix the dry ingredients: Incorporate sugar, flour, baking powder, and a pinch of salt into the wet mixture until just combined.
  4. Add the chocolate chips: Fold the chips into the batter evenly.
  5. Fill the muffin tray: Spoon the batter into a greased or lined muffin tray, filling each cup two-thirds full.
  6. Bake: Preheat your oven to 180°C (350°F) and bake for about 25 minutes or until a toothpick comes out clean.
  7. Cool and enjoy: Let the muffins cool for a few minutes before transferring them to a cooling rack.
