- 1 egg
- 150 g all-purpose flour
- 100 g dark chocolate chips
- 100 g sugar
- 60 ml coconut oil
- 1/3 tsp vanilla extract
- 1 tsp baking powder

- Dehydrated banana (optional)
Instructions
- Prepare the bananas: In a flat bowl, peel your overripe bananas and mash them until smooth.
- Combine the wet ingredients: In a large bowl, add the mashed bananas to the egg, coconut oil, and vanilla extract. Whisk until creamy.
- Mix the dry ingredients: Incorporate sugar, flour, baking powder, and a pinch of salt into the wet mixture until just combined.
- Add the chocolate chips: Fold the chips into the batter evenly.
- Fill the muffin tray: Spoon the batter into a greased or lined muffin tray, filling each cup two-thirds full.
- Bake: Preheat your oven to 180°C (350°F) and bake for about 25 minutes or until a toothpick comes out clean.
- Cool and enjoy: Let the muffins cool for a few minutes before transferring them to a cooling rack.
