Ingredients

- 1 cup chia seeds
- 2 cups almond milk (or any plant-based milk)
- 1 cup raspberries (fresh or frozen)
- 1/2 cup maple syrup (or sweetener of choice)
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium bowl, combine the chia seeds, almond milk, cocoa powder, maple syrup, vanilla extract, and a pinch of salt.
- Stir well and let the mixture sit for about 10 minutes to thicken.
- Once thickened, gently fold in the raspberries.
- Spoon the mixture into silicone molds or pour into a lined baking dish.
- Freeze for at least 2 hours until solid.
- Remove from molds or cut into squares and store in an airtight container in the freezer.
Notes
For best results, let chia seeds absorb the liquid fully before mixing in the raspberries. Can be made a week in advance and stored in the freezer.
