- 1/2 cup powdered sugar (for frosting)
- 1 tablespoon milk (for frosting)

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, and salt in a medium bowl.
- Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Mix in the egg and vanilla extract until completely combined.
- Add the dry mixture to the wet ingredients, mixing until just combined.
- Combine cinnamon and brown sugar in a small bowl to create the filling.
- Take a tablespoon of dough, flatten it, and place a spoonful of filling inside. Cover it with another tablespoon of dough and seal.
- Arrange the stuffed cookies on the baking sheet and bake for 10-12 minutes.
- Whisk together the powdered sugar, milk, and vanilla for the frosting.
- Allow cookies to cool completely before frosting.
Notes
Store cookies in an airtight container for up to a week. Freeze unfrosted cookies for longer storage.
