Description

Delicious cookies filled with a warm cinnamon-sugar mixture, reminiscent of traditional cinnamon rolls.


Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar (for frosting)
  • 1 tablespoon milk (for frosting)
  • 1/2 teaspoon vanilla (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a medium bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  4. Mix in the egg and vanilla extract until completely combined.
  5. Add the dry mixture to the wet ingredients, mixing until just combined.
  6. Combine cinnamon and brown sugar in a small bowl to create the filling.
  7. Take a tablespoon of dough, flatten it, and place a spoonful of filling inside. Cover it with another tablespoon of dough and seal.
  8. Arrange the stuffed cookies on the baking sheet and bake for 10-12 minutes.
  9. Whisk together the powdered sugar, milk, and vanilla for the frosting.
  10. Allow cookies to cool completely before frosting.

Notes

Store cookies in an airtight container for up to a week. Freeze unfrosted cookies for longer storage.
