- 2 tablespoons Olive oil
- 1 medium Onion (Diced)
- 2 cloves Garlic (Minced)
- 2 cups Roasted red peppers
- 1 cup Vegetable broth
- 1 teaspoon Smoked paprika
- 1 teaspoon Dried oregano
- To taste Salt & Pepper
- 4 fillets Cod
- 2 tablespoons Fresh parsley (Chopped)
Instructions
- Heat the olive oil in your skillet over medium heat. When hot, add the diced onions and sauté until they soften, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant, taking care not to let it burn.
- Pour in the roasted red peppers and vegetable broth, stirring in the smoked paprika and dried oregano. Season with salt and pepper according to taste. Let this sauce simmer for about 5 minutes.
- Gently nestle the cod fillets into the sauce, spooning some sauce over the top. Cover the skillet and cook for about 8-10 minutes, or until the fish is opaque.
- Just before serving, sprinkle chopped parsley over the dish for a fresh finish.
Notes
Ensure not to overcrowd the pan for an even cooked cod.
