- 4 Yukon Gold potatoes, diced
- 1 cup heavy cream

- 1/2 cup chicken broth
Instructions
- Prep the ingredients: Wash and dice the potatoes into bite-sized cubes. Finely chop the onion and mince the garlic. Pat the cod dry and season both sides with salt and pepper.
- Cook the potatoes: Heat a tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and season with salt. Sauté them for about 15-20 minutes, stirring occasionally until they turn golden brown and tender. Remove them from the skillet and set aside.
- Sauté the aromatics: In the same skillet, add a little more olive oil if necessary. Toss in the chopped onions and sauté until they soften and turn translucent. Add the minced garlic and cook for an additional minute, stirring constantly to avoid burning.
- Prepare the sauce: Pour in the heavy cream, stirring well to combine with the onions and garlic. Add chicken broth and fresh rosemary, bringing the mixture to a gentle simmer. Allow it to thicken for about 5 minutes, stirring occasionally.
- Cook the cod: Gently place the seasoned cod fillets into the creamy sauce. Cook for about 4-6 minutes on each side, or until the fish flakes easily with a fork. Ensure the sauce remains at a simmer, coating the fish beautifully.
- Combine everything: Add the sautéed potatoes back to the skillet. Gently fold them into the sauce, ensuring they are well coated. Season with additional salt and pepper to taste.
- Serve warm: Once everything is melded together, ladle onto plates and garnish with a sprig of fresh rosemary, if desired.

For a healthier option, consider using an air fryer for the potatoes or roasting the cod in the oven.
