- 1 lb rainbow carrots, cut into 2–3 inch pieces
- 2 tablespoons olive oil
- 1 teaspoon rosemary, chopped
- 1 teaspoon thyme, chopped
- 1 tablespoon parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and peel the rainbow carrots, then cut them into even-sized pieces.
- Toss the carrots in a bowl with olive oil, rosemary, thyme, salt, and pepper until well coated.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through for even browning.
- Remove from the oven, garnish with fresh parsley, and serve warm.
