Description

A vibrant and flavorful side dish featuring rainbow carrots roasted with fresh herbs, delivering a delightful crunch and natural sweetness.


Ingredients

  • 1 lb rainbow carrots, cut into 23 inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon rosemary, chopped
  • 1 teaspoon thyme, chopped
  • 1 tablespoon parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the rainbow carrots, then cut them into even-sized pieces.
  3. Toss the carrots in a bowl with olive oil, rosemary, thyme, salt, and pepper until well coated.
  4. Spread the carrots on a baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through for even browning.
  6. Remove from the oven, garnish with fresh parsley, and serve warm.

Notes
