Description

A delightfully light and fluffy cloud bread made with cottage cheese and bursting with sweet blueberries, perfect for brunch or a quick breakfast.


Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 cup almond flour
  • 1/2 cup blueberries (fresh or frozen)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the cottage cheese and eggs in a mixing bowl, whisking until well-blended and smooth.
  3. Add the almond flour, baking powder, salt, honey, and vanilla extract into the bowl and stir gently until the batter is uniform.
  4. Fold in the blueberries gently with a spatula, ensuring they’re evenly distributed.
  5. Drop spoonfuls of the batter onto the prepared baking sheet, forming small cloud-shaped mounds.
  6. Bake for 20-25 minutes or until golden brown and set in the middle.
  7. Allow to cool slightly before serving.
