Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the cottage cheese and eggs in a mixing bowl, whisking until well-blended and smooth.
- Add the almond flour, baking powder, salt, honey, and vanilla extract into the bowl and stir gently until the batter is uniform.
- Fold in the blueberries gently with a spatula, ensuring they’re evenly distributed.
- Drop spoonfuls of the batter onto the prepared baking sheet, forming small cloud-shaped mounds.
- Bake for 20-25 minutes or until golden brown and set in the middle.
- Allow to cool slightly before serving.
