A hearty and comforting casserole featuring seasoned ground beef, sweet corn, and crispy tater tots, topped with gooey cheese.
Ingredients

- 1 lb ground beef
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1 can (10.5 oz) cream of mushroom soup
- 4 cups frozen tater tots
- 2 cups shredded cheese
- 1 onion, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef and onion for 6–8 minutes.
- Stir in corn, diced tomatoes, cream of mushroom soup, garlic powder, salt, and pepper. Simmer for 5 minutes.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Layer the frozen tater tots over the top of the beef mixture.
- Sprinkle shredded cheese over the tater tots.
- Bake for 30-35 minutes until the tater tots are golden and crispy.
- Let cool for a few minutes before serving.
Notes
For a lighter option, consider using ground turkey or chicken. Feel free to customize with different veggies or cheese blends.
