- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and diced
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Chop and combine the black beans, corn, red and green bell peppers, red onion, cherry tomatoes, cilantro, and jalapeño in a large mixing bowl.
- Whisk together the lime juice, olive oil, cumin, salt, and pepper in a small bowl until well combined.
- Mix the dressing with the medley of beans and vegetables, tossing gently to coat.
- Cover and marinate in the fridge for at least 30 minutes before serving.
- Serve with tortilla chips or as a side dish alongside your favorite proteins.
