Description

A vibrant and healthy dish bursting with fresh ingredients, perfect for gatherings or a light snack.


Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and diced
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Chop and combine the black beans, corn, red and green bell peppers, red onion, cherry tomatoes, cilantro, and jalapeño in a large mixing bowl.
  2. Whisk together the lime juice, olive oil, cumin, salt, and pepper in a small bowl until well combined.
  3. Mix the dressing with the medley of beans and vegetables, tossing gently to coat.
  4. Cover and marinate in the fridge for at least 30 minutes before serving.
  5. Serve with tortilla chips or as a side dish alongside your favorite proteins.

Notes

Prepare the caviar a day before for improved flavors. Avoid excess moisture from rinsed ingredients.
