Description

A rich and creamy side dish that pairs perfectly with meats and adds comfort to any meal.


Ingredients

  • 1 pound fresh spinach or 10 oz frozen spinach
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. Prepare the Spinach: Rinse and chop the fresh spinach, or if using frozen, ensure it’s fully thawed and drained.
  2. Melt the Butter: In a large skillet, melt butter over medium heat.
  3. Stir in Flour: Add the flour, stirring continuously for 1-2 minutes until the flour is lightly golden.
  4. Whisk in Cream: Slowly pour in the heavy cream while whisking to avoid lumps until the mixture thickens.
  5. Add Cheese and Spices: Stir in the grated Parmesan cheese, nutmeg, salt, and pepper until the cheese melts.
  6. Incorporate Spinach: Gently fold in the spinach and warm through for a few minutes.
  7. Serve Warm: Dish out while it’s warm and enjoy.

Notes

For a lighter version, substitute butter with olive oil. Use Greek yogurt in place of heavy cream for a tangy option.
