Instructions
- Prepare the Spinach: Rinse and chop the fresh spinach, or if using frozen, ensure it’s fully thawed and drained.
- Melt the Butter: In a large skillet, melt butter over medium heat.
- Stir in Flour: Add the flour, stirring continuously for 1-2 minutes until the flour is lightly golden.
- Whisk in Cream: Slowly pour in the heavy cream while whisking to avoid lumps until the mixture thickens.
- Add Cheese and Spices: Stir in the grated Parmesan cheese, nutmeg, salt, and pepper until the cheese melts.
- Incorporate Spinach: Gently fold in the spinach and warm through for a few minutes.

Notes
For a lighter version, substitute butter with olive oil. Use Greek yogurt in place of heavy cream for a tangy option.
