Description

A rich and creamy one-pot dish reminiscent of classic cheeseburgers, perfect for cozy family dinners.


Ingredients

  • 1 tablespoon canola oil
  • 1 lb ground beef
  • 1 cup water
  • 1 small onion (diced)
  • 1 tablespoon minced garlic
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon ground black pepper (optional)
  • 1 teaspoon mustard powder
  • 1 can Cheddar cheese soup (10 1/2 oz)
  • 1 cup chicken broth (or beef broth)
  • 2 cups elbow macaroni (uncooked)
  • 1 cup sour cream
  • 1 cup cheddar cheese (shredded)
  • 8 oz Velveeta Cheese

Instructions

  1. Sauté the beef: Begin by setting your Instant Pot to the Sauté function. Once hot, pour in the canola oil. Add the ground beef, allowing it to sear. Break up the meat as it cooks.
  2. Add onion and garlic: Once the beef is browned, add the diced onion and minced garlic. Cook for another 1-2 minutes until the onion softens.
  3. Deglaze the pot: Optionally, push cancel to turn off the Instant Pot. Carefully drain excess grease and pour in water to deglaze, scraping up bits stuck to the bottom.
  4. Mix in spices and soup: Add salt, pepper, mustard powder, cheddar cheese soup, and broth. Stir until fully combined.
  5. Incorporate the pasta: Add the uncooked elbow macaroni, pressing it down to ensure it’s submerged.
  6. Pressure cook: Secure the lid and set the timer for 4 minutes on High Pressure.
  7. Release and stir: Once cooking is complete, wait for 5 minutes before performing a quick release. Carefully remove the lid and stir.
  8. Add sour cream and cheese: Set back to Sauté, add sour cream, stir, then incorporate the Velveeta and shredded cheddar. Place the lid back on for 1 minute to melt.
  9. Stir to combine: Slowly stir to ensure thorough mixing. If too thick, add a splash of broth and let simmer briefly.
  10. Serve and enjoy: Ladle into bowls, topping with fresh chopped parsley.
