- 12 ounces pasta (spaghetti, linguine, or rigatoni)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon red pepper flakes (optional)
- 2 cups cherry tomatoes, halved
- ½ cup vegetable or chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and black pepper, to taste
- 8 ounces fresh burrata cheese
- Fresh basil leaves
- Additional Parmesan cheese
- Lemon zest (optional)
Instructions
- Bring a large pot of salted water to a rolling boil and cook the pasta according to the package instructions until al dente. Reserve a cup of pasta water, then drain the pasta and set aside.
- In a large skillet over medium heat, pour in the olive oil. Add minced garlic and red pepper flakes, stirring until fragrant, about 1 minute.
- Add halved cherry tomatoes to the skillet, cooking for 5-7 minutes until they soften. Pour in the broth and simmer for another 2 minutes.
- Reduce the heat and stir in heavy cream and grated Parmesan cheese, seasoning with salt and black pepper. Allow the sauce to thicken.
- Toss the reserved pasta in the sauce, mixing gently. Adjust the consistency with reserved pasta water as needed.
- Serve the creamy pasta onto warm plates, topping each portion with burrata, fresh basil, additional Parmesan, and a sprinkle of lemon zest. Enjoy while warm!
Notes
For added flavor, consider incorporating grilled chicken, seasonal vegetables, or additional herbs. Make the sauce ahead of time for a quicker meal.
