Description

A luscious and creamy pasta dish featuring burrata, garlic, and cherry tomatoes that creates a delightful and comforting meal.


Ingredients

  • 12 ounces pasta (spaghetti, linguine, or rigatoni)
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon red pepper flakes (optional)
  • 2 cups cherry tomatoes, halved
  • ½ cup vegetable or chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • 8 ounces fresh burrata cheese
  • Fresh basil leaves
  • Additional Parmesan cheese
  • Lemon zest (optional)

Instructions

  1. Bring a large pot of salted water to a rolling boil and cook the pasta according to the package instructions until al dente. Reserve a cup of pasta water, then drain the pasta and set aside.
  2. In a large skillet over medium heat, pour in the olive oil. Add minced garlic and red pepper flakes, stirring until fragrant, about 1 minute.
  3. Add halved cherry tomatoes to the skillet, cooking for 5-7 minutes until they soften. Pour in the broth and simmer for another 2 minutes.
  4. Reduce the heat and stir in heavy cream and grated Parmesan cheese, seasoning with salt and black pepper. Allow the sauce to thicken.
  5. Toss the reserved pasta in the sauce, mixing gently. Adjust the consistency with reserved pasta water as needed.
  6. Serve the creamy pasta onto warm plates, topping each portion with burrata, fresh basil, additional Parmesan, and a sprinkle of lemon zest. Enjoy while warm!

Notes

For added flavor, consider incorporating grilled chicken, seasonal vegetables, or additional herbs. Make the sauce ahead of time for a quicker meal.
