- 250g Cottage Cheese
- 2 Eggs
- 100g Grated Cheese (Cheddar or Gruyère)
- 1 Chopped Onion
- Salt and Pepper to taste

Instructions
- Drain the potatoes: Place the grated potatoes in a sieve, rinse under cold water, and let them sit for at least 10 minutes to drain thoroughly.
- Combine ingredients: In a large mixing bowl, mix the drained potatoes, cottage cheese, eggs, chopped onion, salt, and pepper. Stir gently to incorporate.
- Sauté to perfection: Heat oil in a large skillet over medium heat. Spoon a portion of the potato mixture into the hot oil, flattening gently to form a patty. Cook each side for about 5 minutes until golden brown.
- Layer in the casserole: Transfer the cooked röstis to an oven-safe casserole dish, repeating the frying process until all the mixture is cooked.
- Cheese it up: Sprinkle grated cheese over the top generously.
- Bake: Place the dish in a preheated oven at 180°C (356°F) for 15-20 minutes.
- Serve and garnish: Garnish with freshly chopped parsley or chives and serve warm.
