Description

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups cooked rice
  • 1 cup broccoli florets, steamed
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Heat the skillet: Pour 1 tablespoon of olive oil into a large skillet and warm it over medium-high heat.
  2. Cook the chicken: Season the chicken pieces with salt and pepper, then add them to the hot skillet. Sauté for 6-8 minutes, stirring occasionally, until golden brown.
  3. Remove the chicken from the skillet and set aside.
  4. Sauté garlic: In the same skillet, introduce the remaining tablespoon of olive oil. Add minced garlic and sauté for about 1 minute.
  5. Build the sauce: Pour in the chicken broth and scrape any brown bits stuck to the skillet. Simmer for 2-3 minutes.
  6. Incorporate cream and cheese: Stir in heavy cream and Parmesan cheese. Cook for an additional 3-4 minutes until the sauce thickens.
  7. Season and combine: Add Italian seasoning and return the chicken to the skillet, stirring to coat.
  8. Assemble the bowls: Divide rice among bowls, pouring the creamy garlic chicken over the top, and add steamed broccoli.
  9. Garnish: Sprinkle with fresh parsley before serving.

Notes

Make ahead by preparing chicken and sauce separately. This dish can also be made dairy-free by substituting coconut milk.
