- 4 bone-in, skin-on chicken thighs
- Salt and pepper, to taste
- 1 tablespoon butter
- 1 tablespoon olive oil
- 8 oz fresh cremini or button mushrooms, diced
- 3 garlic cloves, minced
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 2 tablespoons fresh parsley or thyme, chopped
- Additional salt and pepper, to taste
Instructions
- Prepare the chicken: Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.
- Sear the chicken: Heat butter and olive oil in a large skillet over medium-high heat and place the chicken thighs skin-side down. Sear for 5-7 minutes, then flip and cook briefly for 2-3 minutes. Remove from skillet and set aside.
- Sauté the aromatics: In the same skillet, add diced mushrooms and minced garlic, sautéing for 4-5 minutes until brown and fragrant.
- Create the sauce: Pour in the chicken broth, scraping up browned bits, then stir in heavy cream and let simmer until thickened.
- Finish cooking the chicken: Nestle chicken into the sauce, reduce heat to low, cover, and cook for 10-12 minutes.
- Garnish and serve: Sprinkle with fresh herbs before serving directly from the skillet.
Notes
To make ahead, prepare the mushroom sauce a day before. You can also use an air fryer or oven to cook the chicken.
