Description

A rich and creamy soup that combines tender chicken, flavorful pierogi, and crispy bacon for a comforting meal.


Ingredients

  • 2 pieces Boneless, Skinless Chicken Breasts
  • 6 cups Chicken Broth
  • 12 pieces Pierogi (potato and cheese variety)
  • 1 cup Heavy Cream
  • 1 medium Onion
  • 2 cloves Garlic (minced)
  • 6 slices Bacon
  • 2 tablespoons Fresh Rosemary
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley (Optional)

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat. Add bacon slices and cook until crispy, about 5-7 minutes.
  2. Remove bacon and add chopped onions to the pot, sauté until translucent, about 4-5 minutes. Add minced garlic and cook for an additional minute.
  3. Add chicken breasts, seasoning with salt and pepper. Sear for 3-4 minutes on each side until golden brown.
  4. Pour in chicken broth and bring to a gentle simmer. Cover and cook for 15-20 minutes until chicken is tender.
  5. Remove chicken, shred it, and return it to the pot. Bring back to a simmer.
  6. Add pierogi and cook until they float, about 5-7 minutes.
  7. Stir in heavy cream and fresh rosemary, heating until creamy. Adjust seasoning as necessary.
  8. Serve hot, garnished with crispy bacon bits and fresh parsley if desired.

Notes

Make-ahead options include preparing the base and storing for up to two days. Customize with seasonal veggies for added nutrition.
