- 2 pieces Boneless, Skinless Chicken Breasts
- 6 cups Chicken Broth
- 12 pieces Pierogi (potato and cheese variety)
- 1 cup Heavy Cream
- 1 medium Onion
- 2 cloves Garlic (minced)
- 6 slices Bacon
- 2 tablespoons Fresh Rosemary
- 0.5 teaspoon Salt
- 0.5 teaspoon Pepper
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley (Optional)
Instructions
- Heat olive oil in a heavy-bottomed pot over medium heat. Add bacon slices and cook until crispy, about 5-7 minutes.
- Remove bacon and add chopped onions to the pot, sauté until translucent, about 4-5 minutes. Add minced garlic and cook for an additional minute.
- Add chicken breasts, seasoning with salt and pepper. Sear for 3-4 minutes on each side until golden brown.
- Pour in chicken broth and bring to a gentle simmer. Cover and cook for 15-20 minutes until chicken is tender.
- Remove chicken, shred it, and return it to the pot. Bring back to a simmer.
- Add pierogi and cook until they float, about 5-7 minutes.
- Stir in heavy cream and fresh rosemary, heating until creamy. Adjust seasoning as necessary.
- Serve hot, garnished with crispy bacon bits and fresh parsley if desired.
