Description

Creamy Taco Casserole is a delicious and easy-to-make dish that combines the flavors of tacos with a creamy twist, perfect for family dinners.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 can (10 oz) diced tomatoes with green chilies
  • 8 oz tortilla chips
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the taco seasoning, black beans, corn, and diced tomatoes to the skillet, stirring to combine.
  4. In a separate bowl, mix the sour cream and half of the shredded cheese.
  5. In a baking dish, layer half of the tortilla chips, followed by the beef mixture, and then the sour cream mixture.
  6. Repeat the layers with the remaining tortilla chips, beef mixture, and top with the remaining cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Garnish with chopped green onions before serving.

Notes

  • For a spicier version, add jalapeños to the beef mixture.
  • This casserole can be made ahead of time and refrigerated before baking.
