- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup shredded cheese
- 1 can (10 oz) diced tomatoes with green chilies
- 8 oz tortilla chips
- 1/2 cup chopped green onions
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat until fully cooked.
- Add the taco seasoning, black beans, corn, and diced tomatoes to the skillet, stirring to combine.
- In a separate bowl, mix the sour cream and half of the shredded cheese.
- In a baking dish, layer half of the tortilla chips, followed by the beef mixture, and then the sour cream mixture.
- Repeat the layers with the remaining tortilla chips, beef mixture, and top with the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with chopped green onions before serving.
Notes
- For a spicier version, add jalapeños to the beef mixture.
- This casserole can be made ahead of time and refrigerated before baking.
- Feel free to substitute ground turkey or chicken for a leaner option.
