Ingredients

- 1 lb chicken breast
- 1 cup cooked rice
- 1 cup mixed fresh veggies (bell peppers, cucumbers, carrots)
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Green onions for garnish
- Sesame seeds for garnish
Instructions
- Whisk together the mayonnaise, sweet chili sauce, sriracha, soy sauce, garlic powder, salt, and pepper.
- Cook the chicken in a non-stick skillet over medium heat until golden brown and cooked through, about 5–6 minutes.
- Layer the cooked rice in a serving bowl.
- Add the crispy chicken on top of the rice.
- Load the mixed fresh veggies over the chicken.
- Drizzle the bang bang sauce over the chicken and veggies.
- Garnish with green onions and sesame seeds. Serve immediately.

Can be made ahead of time; store chicken and sauce separately in the fridge.
