Description

Delight in the crispy exterior and savory filling of these delicious chimichangas filled with tender shredded chicken and melted cheese.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (Cheddar, Monterey Jack, or a blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 8 large flour tortillas
  • Oil for frying
  • Sour cream and salsa for serving

Instructions

  1. Combine the shredded chicken, cheese, chili powder, cumin, garlic powder, onion powder, salt, and pepper in a large bowl.
  2. Heat about an inch of oil in a large skillet over medium heat until it reaches 350°F.
  3. Spoon about 1/3 cup of the chicken mixture onto the center of each tortilla.
  4. Fold the sides over the filling and roll it up tightly from the bottom.
  5. Carefully place the chimichangas seam-side down in the hot oil.
  6. Fry until golden brown and crispy, about 3-4 minutes per side.
  7. Remove the chimichangas with a slotted spoon and allow them to drain on paper towels.
  8. Serve warm with sour cream and salsa.

Notes

Make-ahead tips: Fillings can be prepared in advance and stored in the fridge. For a healthier option, try air-frying or baking the chimichangas.
