- 2 cups cooked shredded chicken
- 1 cup shredded cheese (Cheddar, Monterey Jack, or a blend)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 8 large flour tortillas
- Oil for frying
- Sour cream and salsa for serving
Instructions
- Combine the shredded chicken, cheese, chili powder, cumin, garlic powder, onion powder, salt, and pepper in a large bowl.
- Heat about an inch of oil in a large skillet over medium heat until it reaches 350°F.
- Spoon about 1/3 cup of the chicken mixture onto the center of each tortilla.
- Fold the sides over the filling and roll it up tightly from the bottom.
- Carefully place the chimichangas seam-side down in the hot oil.
- Fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the chimichangas with a slotted spoon and allow them to drain on paper towels.
- Serve warm with sour cream and salsa.
Notes
Make-ahead tips: Fillings can be prepared in advance and stored in the fridge. For a healthier option, try air-frying or baking the chimichangas.
