Description

Ingredients

  • 1 tablespoon White Vinegar
  • 1 piece Egg for Egg Wash
  • 1/2 cup Plain Flour
  • 1 cup Panko Breadcrumbs
  • 1 cup Neutral Oil
  • 2 slices Toasted Bread
  • 1 piece Avocado (Sliced)
  • 1/4 cup Feta Cheese (Crumble on top)
  • 1 teaspoon Chili Flakes (For serving)
  • 1 teaspoon Sea Salt Flakes (To taste)

Instructions

  1. Prepare the Avocado Toast: Toast two slices of your favorite bread until golden brown and crunchy.
  2. Poach the Eggs: Fill a pot with water and add the white vinegar. Bring to a gentle simmer over medium heat. Crack each egg into a small bowl, then carefully slide into the simmering water. Poach for about 4-5 minutes until the whites are set but the yolks remain soft. Use the slotted spoon to lift the eggs out and drain on paper towels.
  3. Prepare the Egg Coating: In one bowl, add the plain flour and season with salt. In another, whisk the egg reserved for the egg wash. Place the panko breadcrumbs in a third dish.
  4. Crumb the Poached Eggs: Gently roll each poached egg in the seasoned flour, dip them into the egg wash, and then coat thoroughly in panko breadcrumbs.
  5. Fry the Eggs: Heat your chosen neutral oil in a skillet over medium heat. Once hot, carefully add the crumbed eggs. Fry for 2-3 minutes on each side until golden brown and crispy. Remove them and drain on paper towels.
  6. Assemble the Toast: Spread the sliced avocado generously on each piece of toast. Set a crispy, panko crumbed poached egg atop the avocado. Crumble feta cheese over the eggs, sprinkle with chili flakes, and finish with a sprinkle of sea salt flakes. Serve immediately.

Notes

For a healthier option, consider air frying the crumbed eggs. Use enough vinegar to help the egg whites stay compact while poaching.
