Description

Delightfully zesty lemon cookies with a soft interior and a crisp outer shell, filled with homemade lemon curd.


Ingredients

Scale
  • 250 g all-purpose flour
  • 125 g unsalted butter, softened
  • 80 g sugar
  • 1 large egg
  • 1 tsp vanilla paste
  • 1 tsp lemon zest
  • 1 jar of lemon curd
  • Powdered sugar for dusting

Instructions

  1. Prepare the dough: In a mixing bowl, combine the flour. In another bowl, cream together butter, sugar, egg, and vanilla paste until light and fluffy. Gradually incorporate the flour until smooth.
  2. Chill the dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Roll out the dough: On a floured surface, roll the dough to about 3mm thick.
  4. Cut the cookies: Use cookie cutters to cut out shapes and place them on a lined baking sheet.
  5. Bake: Preheat the oven to 200°C (or 175°C for fan ovens). Bake for 8 minutes until lightly golden.
  6. Cool and fill: Let the cookies cool, then spread lemon curd on one and sandwich with another. Dust with powdered sugar.

Notes

For the best texture, avoid over-mixing the dough and always chill it before baking.
