Delightfully zesty lemon cookies with a soft interior and a crisp outer shell, filled with homemade lemon curd.

- 250 g all-purpose flour
- 125 g unsalted butter, softened
- 80 g sugar
- 1 large egg
- 1 tsp vanilla paste
- 1 tsp lemon zest
- 1 jar of lemon curd
- Powdered sugar for dusting
Instructions
- Prepare the dough: In a mixing bowl, combine the flour. In another bowl, cream together butter, sugar, egg, and vanilla paste until light and fluffy. Gradually incorporate the flour until smooth.
- Chill the dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Roll out the dough: On a floured surface, roll the dough to about 3mm thick.
- Cut the cookies: Use cookie cutters to cut out shapes and place them on a lined baking sheet.
- Bake: Preheat the oven to 200°C (or 175°C for fan ovens). Bake for 8 minutes until lightly golden.
- Cool and fill: Let the cookies cool, then spread lemon curd on one and sandwich with another. Dust with powdered sugar.
Notes
For the best texture, avoid over-mixing the dough and always chill it before baking.
