A silky, tropical panna cotta infused with coconut and pandan flavors, perfect for any occasion.
Ingredients

- 350 g whole milk
- 45 g granulated sugar
- 100 g coconut milk
- 150 g heavy cream
- 10 g gelatin sheets
- 10 g pandan powder
- Shredded coconut (for topping)
Instructions
- Hydrate the gelatin: Place the gelatin sheets in a bowl of cold water and let them soak for about 5-10 minutes until softened.
- Warm the mixture: In a medium saucepan, combine the whole milk, sugar, and pandan powder. Place the saucepan over medium-low heat and stir gently until the sugar completely dissolves. Do not let it boil!
- Incorporate coconut milk and cream: Pour in the coconut milk and heavy cream, stirring to create a luscious mixture. Continue to heat until it is warmed through.
- Add gelatin: Once the mixture is warm, remove it from the heat and add the hydrated gelatin sheets. Whisk until the gelatin completely dissolves.
- Cool and set: Pour the mixture into your prepared ramekins or molds and let them cool to room temperature before refrigerating. Chill for at least 240 minutes, or until firmly set.
- Serve: Once set, gently run a knife around the edges of the panna cotta and flip onto a plate if desired. Garnish with shredded coconut.
