Description
A warm and comforting dish of creamy mashed sweet potatoes topped with golden mini marshmallows, perfect for holidays or chilly evenings.

- 4 medium sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup butter, softened
- 1/2 cup cream or milk
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Bake the whole sweet potatoes on a baking sheet for about 45 minutes or until soft.
- Cool down the sweet potatoes slightly.
- Scoop the insides into a mixing bowl, leaving some flesh in the skins.
- Mix in the brown sugar, softened butter, cream (or milk), vanilla extract, and salt.
- Refill the skins with the sweet potato mixture.
- Top each filled sweet potato with mini marshmallows.
- Return to the oven and bake at 350°F (175°C) for another 15-20 minutes until the marshmallows are golden brown.
- Serve warm and enjoy!
Notes
You can substitute maple syrup for brown sugar and Greek yogurt for cream if desired. Bake and scoop sweet potatoes ahead of time for convenience.
