- In a heavy-bottomed saucepan over medium heat, combine the water and unsalted butter. Bring to a gentle boil, allowing the butter to melt completely.
- Once boiling, stir in the all-purpose flour and salt. Keep mixing until the mixture pulls away from the sides of the pan, forming a smooth ball.
- Remove from heat and allow the mixture to cool slightly, about 5-10 minutes.
- Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
- Transfer the dough to a piping bag fitted with a star tip, ready for shaping.
- Pipe the dough in 2-inch rings onto a parchment-lined baking sheet.
- In your deep fryer, heat oil to 350°F (175°C). Fry the donuts until golden brown, roughly 2-3 minutes per side.
- Once fried, remove the crullers and drain on paper towels.
- Whisk together powdered sugar, milk, and vanilla until smooth to create your glaze.
- Dip the cooled crullers into the glaze, allowing excess to drip off, and let them set before serving.
Notes
For a dairy-free option, substitute coconut oil for butter and almond milk for regular milk. For a healthier version, consider air frying.
