Description

Delightful and colorful Easter cookies that are soft, crunchy, and perfect for any spring gathering.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups confectioners’ sugar
  • 2 tablespoons milk
  • Food coloring (optional)
  • Sprinkles for decoration (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together flour, baking soda, and baking powder in a small bowl; set aside.
  3. Cream butter and sugar in a large bowl using an electric mixer until light and fluffy.
  4. Add the egg, vanilla extract, and almond extract, and mix until well combined.
  5. Blend in the dry mixture gradually until fully incorporated.
  6. Roll teaspoons of dough into balls and place them on ungreased cookie sheets; flatten gently.
  7. Bake for 8 to 10 minutes, or until the edges are golden.
  8. Cool completely on wire racks.
  9. Prepare frosting by mixing confectioners’ sugar, milk, and food coloring until smooth.
  10. Decorate cooled cookies with frosting and sprinkles.

Notes

Chill the dough for easier handling. Consider using an air fryer for quicker baking.
