Description

A creamy and decadent cheesecake inspired by traditional baklava, featuring layers of phyllo pastry, mixed nuts, and a drizzle of honey.


Ingredients

  • 16 oz cream cheese, softened
  • 1 cup Greek yogurt
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 8 oz phyllo pastry sheets
  • 1 cup unsalted butter, melted
  • 1 cup mixed nuts (walnuts, almonds, pistachios), chopped
  • 1/2 cup honey
  • 1 tsp ground cinnamon
  • 1/4 cup water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Beat the softened cream cheese and sugar until smooth and creamy.
  3. Add the Greek yogurt, eggs, and vanilla extract. Mix until consistent and smooth.
  4. Combine the chopped mixed nuts with the ground cinnamon in a separate bowl.
  5. Layer one sheet of phyllo dough in your greased springform pan, brushing melted butter on top.
  6. Repeat this phyllo layering for 5-6 sheets, brushing each with melted butter.
  7. Pour half of the cheesecake mixture over the phyllo layers, followed by half of the nut mixture.
  8. Add another layer of phyllo dough, brushing it with butter, then repeat with the remaining cheesecake and nut mixtures. Top with a final layer of phyllo.
  9. Bake in the oven for 50-60 minutes, until firm and golden-brown.
  10. Make the honey syrup by simmering honey and water in a small saucepan until thickened.
  11. Drizzle the warm syrup over the cooled cheesecake.
  12. Cool completely before slicing and serving.

Notes

Prepare up to a day in advance for better flavor. Keep phyllo sheets covered to avoid drying out. Can be served with berries, ice cream, or coffee.
