A creamy and decadent cheesecake inspired by traditional baklava, featuring layers of phyllo pastry, mixed nuts, and a drizzle of honey.

- 16 oz cream cheese, softened
- 1 cup Greek yogurt
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 8 oz phyllo pastry sheets
- 1 cup unsalted butter, melted
- 1 cup mixed nuts (walnuts, almonds, pistachios), chopped
- 1/2 cup honey
- 1 tsp ground cinnamon
- 1/4 cup water
Instructions
- Preheat your oven to 350°F (175°C).
- Beat the softened cream cheese and sugar until smooth and creamy.
- Add the Greek yogurt, eggs, and vanilla extract. Mix until consistent and smooth.
- Combine the chopped mixed nuts with the ground cinnamon in a separate bowl.
- Layer one sheet of phyllo dough in your greased springform pan, brushing melted butter on top.
- Repeat this phyllo layering for 5-6 sheets, brushing each with melted butter.
- Pour half of the cheesecake mixture over the phyllo layers, followed by half of the nut mixture.
- Add another layer of phyllo dough, brushing it with butter, then repeat with the remaining cheesecake and nut mixtures. Top with a final layer of phyllo.
- Bake in the oven for 50-60 minutes, until firm and golden-brown.
- Make the honey syrup by simmering honey and water in a small saucepan until thickened.
- Drizzle the warm syrup over the cooled cheesecake.
- Cool completely before slicing and serving.
Notes
Prepare up to a day in advance for better flavor. Keep phyllo sheets covered to avoid drying out. Can be served with berries, ice cream, or coffee.
