- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup refried beans
- 1/4 cup diced onions
- 1/2 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- Oil for frying
Instructions
- In a large bowl, combine the shredded chicken, cheese, refried beans, diced onions, garlic powder, cumin, salt, and pepper. Mix until everything is well blended.
- Place a tortilla on a flat surface and spoon about one-quarter of the chicken mixture onto the center. Fold in the sides and roll tightly to form a chimichanga.
- Repeat with remaining tortillas and filling.
- Heat oil in a large skillet over medium heat. Fry chimichangas seam-side down for about 3-4 minutes per side until golden brown.
- Transfer to a plate lined with paper towels to drain excess oil. Serve hot.
Notes
For a healthier option, bake the chimichangas at 375°F (190°C) for 20-25 minutes instead of frying.
