- 2 cups cooked rice (ideally cold, leftover)
- 1 cup cooked chicken, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat the sesame oil in a large pan over medium heat.
- Add the mixed vegetables and sauté until tender, about 3-4 minutes.
- Push the vegetables to the side of the pan and pour the beaten eggs into the center.
- Scramble the eggs until fully cooked.
- Incorporate the cooked rice and chicken, stirring everything together.
- Drizzle in the soy sauce, seasoning with salt and pepper.
- Garnish with chopped green onions before serving.
