- 4 boneless, skinless chicken breasts
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Oil for frying
Instructions
- Preheat your oven to 375°F (190°C).
- Blend the softened butter, minced garlic, parsley, dill, salt, and pepper in a mixing bowl.
- Pound each chicken breast between plastic wrap to an even thickness.
- Place a tablespoon of the garlic herb butter mixture in the center of each chicken breast and roll tightly.
- Dredge each roll in flour, dip into the beaten eggs, and coat with breadcrumbs.
- Heat oil in a skillet and fry each roll until golden brown on all sides.
- Transfer to a baking dish and bake for 15-20 minutes until cooked through.
