Description

A thick, luscious cookie cake with crunchy edges and a soft, gooey center, topped with rich chocolate frosting.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups chocolate chips
  • Chocolate frosting, for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your baking pan.
  2. Whisk together the all-purpose flour, baking soda, and salt.
  3. Beat the unsalted butter, brown sugar, and granulated sugar together until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  7. Fold in the chocolate chips with a rubber spatula.
  8. Spread the batter evenly in your prepared baking pan.
  9. Bake for 25-30 minutes, until edges are golden brown.
  10. Allow to cool completely before frosting with chocolate frosting.

Notes

For a more chocolatey cake, add cocoa powder to the flour mix. Can be frozen unfrosted for up to three months.
