Description

A hearty and comforting casserole featuring ground beef, crispy potatoes, cheesy goodness, and a blend of tangy tomatoes and sweet corn.


Ingredients

  • 1 pound ground beef
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) corn
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar or blend)
  • 1 package (30 ounces) frozen hash brown potatoes, thawed
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef and chopped onion over medium heat until browned, about 5-7 minutes.
  3. Drain excess fat and stir in the diced tomatoes, corn, sour cream, garlic powder, paprika, salt, and pepper.
  4. Spread half of the thawed hash browns in a greased 9×13 inch baking dish.
  5. Pour the beef mixture over the potatoes, spreading evenly.
  6. Layer the remaining hash browns on top.
  7. Sprinkle cheese evenly over everything.
  8. Bake for 45-50 minutes until bubbly and golden.
  9. Cool slightly before serving.

Notes

You can make this casserole ahead and store it in the fridge. Just add a few extra minutes to the baking time if baking straight from the fridge. Customize with your favorite vegetables or spices as desired.
