- 1 pound ground beef
- 1 can (15 ounces) diced tomatoes
- 1 can (15 ounces) corn
- 1 cup sour cream
- 2 cups shredded cheese (cheddar or blend)
- 1 package (30 ounces) frozen hash brown potatoes, thawed
- 1 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the ground beef and chopped onion over medium heat until browned, about 5-7 minutes.
- Drain excess fat and stir in the diced tomatoes, corn, sour cream, garlic powder, paprika, salt, and pepper.
- Spread half of the thawed hash browns in a greased 9×13 inch baking dish.
- Pour the beef mixture over the potatoes, spreading evenly.
- Layer the remaining hash browns on top.
- Sprinkle cheese evenly over everything.
- Bake for 45-50 minutes until bubbly and golden.
- Cool slightly before serving.
Notes
You can make this casserole ahead and store it in the fridge. Just add a few extra minutes to the baking time if baking straight from the fridge. Customize with your favorite vegetables or spices as desired.
