Description

Celebrate with these delightful Easy Easter Funfetti Cake Pops, combining colorful sprinkles and moist cake, coated in creamy chocolate.


Ingredients

  • 1 box Funfetti cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 cup melting chocolate
  • Sprinkles for decoration
  • Lollipop sticks

Instructions

  1. Preheat your oven according to the cake mix instructions. In a large mixing bowl, combine the Funfetti cake mix, eggs, vegetable oil, and water. Mix until smooth. Pour this mixture into your greased 9×13 inch pan.
  2. Place the pan in the oven and bake according to package instructions or until a toothpick inserted comes out clean. Once baked, let the cake cool completely in the pan.
  3. Use your hands or a fork to crumble the cake into fine pieces into a large bowl.
  4. Take about a tablespoon of the cake crumbs, and roll them into balls approximately 1 inch in diameter. Set these balls on your prepared baking sheet.
  5. Gently insert a lollipop stick into each cake ball, ensuring it goes in about halfway without breaking the cake.
  6. Place the baking sheet in the freezer for about 30 minutes to firm up.
  7. Following the package instructions, melt your chocolate in a microwave-safe bowl until smooth and creamy.
  8. Carefully dip each chilled cake pop into the melted chocolate, allowing excess to drip off.
  9. Before the chocolate sets, sprinkle colorful sprinkles over the chocolate.
  10. Place the decorated pops in a Styrofoam block until the chocolate hardens completely.

Notes

You can prepare the cake and crumble it a day ahead and store the crumbs in an airtight container. Make sure to freeze the cake pops before dipping to prevent them from falling apart.
