- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (15 oz) diced tomatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 cup cooked pasta or rice
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat and sauté the onion and garlic until softened, about 3-4 minutes.
- Add the ground beef, browning it thoroughly and draining excess fat.
- Stir in cream of mushroom soup and diced tomatoes, seasoning with salt and pepper, and simmer for about 5 minutes.
- Layer the cooked pasta or rice in a baking dish.
- Pour the beef mixture over the pasta or rice, spreading evenly.
- Top with shredded cheese.
- Bake for 25-30 minutes until the cheese is golden and bubbly.
- Let cool for a few minutes before serving.
Notes
You can assemble the casserole a day in advance and store it in the refrigerator. Adjust baking time if it goes in cold.
