- 6 egg yolks
- 3/4 cup granulated sugar
- 2/3 cup milk
- 1 1/2 cups mascarpone cheese
- 1 cup heavy cream
- 1 cup strong brewed coffee, cooled
- 1 teaspoon vanilla extract
- 24 ladyfingers
- Cocoa powder for dusting
Instructions
- Prepare the custard: In a medium saucepan, whisk together the egg yolks and sugar until pale and thickened. Gradually whisk in the milk and place over medium heat. Cook, stirring constantly, until thickened to a custard consistency. Once thickened, remove from heat and let cool.
- Blend the mascarpone: In a large mixing bowl, beat the mascarpone cheese until smooth and creamy.
- Whip the cream: In another bowl, whip the heavy cream until soft peaks form. Gently fold this whipped cream into the mascarpone mixture.
- Combine mixtures: Once the cooled egg yolk mixture reaches room temperature, fold it gently into the mascarpone mixture.
- Assemble the layers: Dip the ladyfingers briefly into the cooled coffee, allowing them to absorb just enough without becoming soggy. Arrange them in a single layer in a serving dish.
- Add mascarpone cream: Spread half of the mascarpone mixture over the layer of ladyfingers.
- Repeat the layers: Add another layer of dipped ladyfingers, followed by the remaining mascarpone mixture.
- Chill: Cover the dish with plastic wrap and refrigerate for at least 240 minutes, or better yet, overnight.
- Serve: Just before serving, dust the top with cocoa powder.
Notes
Tiramisu tastes even better after it sets overnight, making it an ideal make-ahead dessert.
