- 2 tablespoons olive oil
- 2 tablespoons honey or maple syrup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon fresh thyme or rosemary (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the baby carrots with olive oil, honey or maple syrup, salt, black pepper, garlic powder, and herbs if using.
- Spread the carrots in a single layer on a baking sheet.
- Roast in the oven for 20-25 minutes, stirring halfway through.
- Serve warm as a side dish.
Notes
For make-ahead, prepare the carrots the day before and store in an airtight container in the fridge. Reheat before serving.
