Description

Delight in the sweet, tender crunch of easy roasted baby carrots, glazed to perfection with honey and garlic.


Ingredients

  • 1 pound baby carrots
  • 2 tablespoons olive oil
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the baby carrots with olive oil, honey or maple syrup, salt, black pepper, garlic powder, and herbs if using.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast in the oven for 20-25 minutes, stirring halfway through.
  5. Serve warm as a side dish.

Notes

For make-ahead, prepare the carrots the day before and store in an airtight container in the fridge. Reheat before serving.
